The well-furnished lounge resembles that of an elegant house; downstairs, tables dressed in crisp white linen overlook the lagoon and mangroves. White-gloved waiters and live piano music add to the refined atmosphere. All of the islands are represented in a variety of inspired dishes -- sample St. Maarten with duck medallions in green-pepper sauce, or visit St. Lucia in the fillet of beef with a two-wine sauce.
