As the founding member of the local chapter of the Chaîne des Rôtísseurs, chef Paul Newman lets his talent soar at Coral Gardens' elegantly appointed, terrace-style restaurant. A typical meal (served on Royal Doulton china, no less) might start with truffle mousse, follow with chipotle-glazed maple-leaf duck breast, and finish with upside-down apple pie, all complemented by wines from the outstanding list. The careful attention to detail makes an evening here live up to its name's translation from the Arawak Indian tongue, "heavenly." New and very popular is the seven-course tasting menu.
