Several cutting-edge establishments are perfecting and defining Pacific Northwest fare, which incorporates regional seafood, notably salmon, and locally grown produce, often accompanied by British Columbian wines.
Vancouver dining is fairly informal. Casual but neat dress is appropriate everywhere. Smoking is prohibited by law in all Vancouver restaurants (indoors). A 15% tip is expected. A 7% Goods and Services Tax (GST) is levied on the food portion of restaurant bills, and a 10% liquor tax is charged on wine, beer, and spirits. Some restaurants build the liquor tax into the price of the beverage, but others add it to the bill.
