Bistro Bis
Hotel George, 15 E St. NW, Washington, DC, USA

Phone 202/661-2700

A zinc bar, spacious brown leather booths, and a glass-front display kitchen create delicious expectations at Bistro Bis, the second restaurant from chef Jeffrey Buben, owner of the much-acclaimed Vidalia restaurant downtown. Buben calls his restaurant a modern bistro serving French food with an American sensibility. His menu seamlessly merges standards of the modern American repertory with French bistro classics. For a first course, don't miss the onion tart Alsacienne, a crisp pastry topped with caramelized onions, bacon, Muenster cheese, and crème fraîche. Main-course hits include grilled escalope (thin slice) of salmon with porcini mushrooms, braised oxtail, celery root puree and bordelaise sauce, or rabbit Dijonnaise, a braised leg and roasted loin with baby carrots, spatzle, pearl onions, and Dijon rabbit jus. Reservations essential. Metro: Union Station.
