I've traveled all over the world and this was one of my favorite hotels anywhere. It was really almost a perfect place to stay. The old stone building is a bit like a castle and the thick, stone walls kept my room a fairly constant and pleasant temperature day and night. I never had to use the air conditioner in June. The room and cavernous bathroom were spotlessly clean and comfortable. The bed was superb as was the WiFi throughout the hotel. The very pleasant roof terrace was a wonderful place for breakfast and to relax in the evenings with superb views of Urgup and the surrounding countryside. The breakfasts were also outstanding with homemade bread and jams, eggs made to order, cereal, and traditional Turkish breakfast fare.
The hotel is located right by the main square of Urgup, which is a wonderful town. The location is just about perfect and extremely convenient to restaurants, shops, tour company offices, and public transport. I passed through Goreme, which has more tourists than locals, several times and I was very happy I chose to stay in Urgup.
The staff was friendly and helpful. There are two things travelers should be aware of though. First there is a mosque across the street and the call to prayer is quite loud. I had no trouble sleeping though. This may not be a good choice for you if you have trouble with stairs. My in-suite bathroom was about five feet above my room, accessed by stone stairs. Stairs are also required to reach the terrace and upper rooms.

Ziggy's Restaurant next door is the best kept secret in Cappedocea!
Only challenge is no AIr Conditioning in cave rooms so hot in the afternoon when it was very hot outside.

A nice hotel offering clean rooms. The regular rooms are small and, therefore, they are not furnished with wardrobes... Bathroom is relatively small; shower cabin is narrower than your home cabin. However, if you need a special room for your honeymoon, make sure to book a higher class room, there are just four of them.
Overall, the hotel is very romantic. Room walls are made of stone blocks, not painted. High wooden ceilings and wooden floors.

"The Surban -good property but beds were hard and layout increased noise level"
The staff were great, very friendly. The building and decorations were great; the breakfast room was sensationally decorated with loads of artifacts. The breakfast was very good and extensive. The location was o.k., a walk uphill back from the centre of town though. At the time of our stay in July the terrace had two tables and one umbrella; more furniture and some potted plants would have made it a great place to relax. The only negative was the beds (very hard) and due to the design of the building with rooms off a long wooden corridor it was a very noisy place - lots of Europeans talking loudly and slaming doors very late at night; difficult for staff to manage. Also there were some families staying and the children wandered freely in the bar area; hard to have a quiet drink and talk about the day when teenagers have taken over an area - maybe some areas should be "adults only" rather than leaving it up to the families to be considerate of other guests.
