This hotel is fantastic. Front desk clerks are the friendliest I have encountered in Europe. It is across the street from the main entrance to the old walled city, so the location is ideal. There are well landscaped grounds and a pool area and it was surprisingly quiet and peaceful considering how close it is to the crowds entering the historic city.
There is a closet with clothes hangers, but my only negative thing to say is there is no iron or ironing board (instead they offer next-day laundry service). There is a coffee maker with coffee packs and sugar (I didn’t see any tea bags but I had my own). There is no creamer in the room but a small container of milk is available at the lobby bar for free. The room has air conditioning, but sadly no refrigerator (my only other negative). There is a huge window separating the sink and bathtub from the main room. A blind can be lowered, but with the bright bathroom lights it is still see-through. I was alone so it was fine, but if you are traveling with someone you should be aware of this. The shower (separate from the bathtub) and toilet did have a sliding door to close them off from the rest of the sink area for more privacy.
The room décor is elegant, as is the entire hotel. With the lush grounds it has the feel of a country villa. If I ever return to Carcassonne, I will definitely stay here.
