Where to Eat
Headwaters Restaurant - Award-winning chef/owner Vitaly Paley opened Headwaters in the reimagined dining room at the historic Heathman Hotel in the fall of 2016. Celebrating Oregon's diverse bounty, from farm to sea, Headwaters will showcase Paley's renowned cooking, which helped him earn a 2005 James Beard Foundation Best Chef Pacific Northwest Award, Portland Monthly's 2012 Chef of the Year, and the 2012 Empire Builder Award by Food & Wine. The restaurant is open daily for Breakfast, Lunch, Happy Hour, and Dinner. A weekend brunch is also available from 9 AM to 3 PM.
Russian Tea Service - Chef Vitaly Paley and the team at Headwaters are proud to continue a long tradition at the Heathman Hotel of Afternoon Tea service, with a new nod to the chef's Russian roots. A prix fixe menu is offered, complete with drinks and a three-tiered stand of sweet and savory treats which includes delights such as pierogi, Kiev torts, smoked and kippered fish, open-face rye sandwiches, steopka cakes, Bird's Milk tortes, Georgian khachapouri and more.
