Here are three of our favorites<\/span><span style=\"font-family: Helvetica;\">.<\/span><\/p>\n<p><strong><span style=\"font-family: Helvetica;\">The Herbfarm<\/span><\/strong><span style=\"line-height: 1.5; font-family: Helvetica;\">\u00a0<\/span><\/p>\n<p><a href=\"http:\/\/theherbfarm.com\"><span style=\"font-family: Helvetica;\">The Herbfarm<\/span><\/a><span style=\"font-family: Helvetica;\"> experience begins before you\u2019ve even set foot in the restaurant, which is located about 30 minutes east of <a href=\"https:\/\/www.expedia.com\/Seattle-Hotels.d178307.Travel-Guide-Hotels\">Seattle<\/a>. An invitation to drink herbal tea, while attending the pre-dinner garden tour, hints that the evening is going to be different than most.<\/span><span style=\"line-height: 1.5; font-family: Helvetica;\">\u00a0<\/span><\/p>\n<p><span style=\"font-family: Helvetica;\">The restaurant itself is at once fussy and comfortable\u2013one part Victorian parlor, one part simple farm house.\u00a0The d\u00e9cor is a prelude to the food; complex, modern cuisine that feels like your grandmother cooked it (that is, if your grandmother was an astonishingly good cook).<\/span><span style=\"line-height: 1.5; font-family: Helvetica;\">\u00a0<\/span><\/p>\n<blockquote style=\"margin: 0px 0px 0px 40px; border: medium none; padding: 0px;\">\n<p><span style=\"line-height: 1.5; font-family: Helvetica;\">Viewfinder Tip:<strong>\u00a0<\/strong>If you opt for the wine pairing at The Herbfarm, spend the night next door at\u00a0<a href=\"https:\/\/www.expedia.com\/Seattle-Hotels-Willows-Lodge.h536525.Hotel-Information\">Willows Lodge<\/a>.<\/span><\/p>\n<\/blockquote>\n<p><span style=\"font-family: Helvetica;\">The casual-meets-<em>Downton-Abbey<\/em> contradiction extends to the \u201cvibe\u201d of the meal as well. You may have more utensils, goblets, and wine glasses than you can imagine is necessary for one meal, but you are also encouraged to get up and stretch your legs, chat with your fellow diners, and watch the chef prepare your next course. It\u2019s a unique vibe <\/span><a href=\"https:\/\/novacationrequired.squarespace.com\/blog\/2013\/03\/grazing-at-the-herbfarm\"><span style=\"font-family: Helvetica;\">we feel<\/span><\/a><span style=\"font-family: Helvetica;\"> The Herbfarm pulls of with aplomb.<\/span><\/p>\n<p><strong><span style=\"font-family: Helvetica;\">Willows Inn<\/span><\/strong><\/p>\n<p><span style=\"font-family: Helvetica;\">Like The Herbfarm, the <a href=\"http:\/\/www.willows-inn.com\/dining\/\">Willows Inn<\/a> experience starts the minute you get on the tiny ferry to Lummi Island, just north of Seattle.\u00a0Because the food is so intrinsically tied to the island, the briny sea spray and scent of pine practically serve as the first course.<\/span><\/p>\n<p><span style=\"font-family: Helvetica;\">D\u00e9cor at <\/span><span style=\"font-family: Helvetica;\">Willows Inn<\/span><span style=\"font-family: Helvetica;\"> is a study in Pacific Northwest simplicity. The restaurant seems to be decorated by the setting itself: Out the windows, Puget Sound glimmers in the moonlight, while evergreens tower overhead.<\/span><\/p>\n<p><a href=\"https:\/\/novacationrequired.squarespace.com\/blog\/2013\/04\/have-food-well-travel\"><span style=\"font-family: Helvetica;\">Our multi-hour menu<\/span><\/a><span style=\"font-family: Helvetica;\"> of five courses and 10 \u201csnacks\u201d included pickled oysters, grilled shiitake mushrooms, toasted kale with truffles and rye, and wild onions with caramelized mussels and toasted bread. But the smoked salmon, which we\u2019d been anticipating as we watched the team stoke the smoker all day, was the star of the event. The staff described this as &#8220;salmon candy.&#8221; They were not wrong.<\/span><\/p>\n<p><span style=\"font-family: Helvetica;\"><\/p>\n<div class=\"small-width-image-container lansdscape-aff334a7-50ee-63e1-bbde-ff000073f150\"><img decoding=\"async\" src=\"\/images\/default-source\/user-no-vacation-required\/dining-content-[size_512x290].jpg\" id=\"landscape-aff334a7-50ee-63e1-bbde-ff000073f150\"\/><\/p>\n<p class=\"Title\">Salmon Candy (as it is lovingly called) at Willows Inn<\/p>\n<\/div>\n<p> <\/span><\/p>\n<p><strong><span style=\"font-family: Helvetica;\">Canlis<\/span><\/strong><\/p>\n<p><span style=\"font-family: Helvetica;\"><a href=\"http:\/\/www.canlis.com\">Canlis<\/a>, which is just a quick trip from <\/span><span style=\"font-family: Helvetica;\">any hotel in downtown Seattle, is considered by many to be the Emerald City\u2019s finest dining experience (and you won\u2019t hear any disagreement from us). While &#8220;elegant&#8221; is an appropriate adjective, swanky is much more on point. From the midcentury modern architecture to the panoramic views of Lake Union and the city, this place has class in spades.<\/span><\/p>\n<p><span style=\"font-family: Helvetica;\">Canlis was opened in 1950 and it feels like not that much has changed. It still is a put-on-your-best-outfit-and-act-like-a-grown-up restaurant. And the extra effort to dine at Canlis is returned to you with a level of service and attention that is disruptively sincere.<\/span><span style=\"font-family: Helvetica;\"> Consider the magicians\/valets who just know when to have your car ready (despite not giving you a ticket when you arrive). The wait staff seems to intuit your needs.<\/span><span style=\"line-height: 1.5; font-family: Helvetica;\">\u00a0<\/span> <\/p>\n<p><span style=\"font-family: Helvetica;\">On a recent visit, after eating one of the most delicious meals of our lives, we were treated to a tour of the restaurant before dessert. When we returned to the table, we were surprised with a cake to celebrate the event our server somehow knew we were celebrating. Did we mention that?!<\/span><\/p>\n<p><span style=\"font-family: Helvetica;\">We\u2019ve had the recipe for the namesake salad from this restaurant on our bulletin board for years. Despite the fact that it&#8217;s a fairly simple recipe, we\u2019ve never tried to make it at home. Why? Because the dish is far more than the sum of its parts; the salad is wonderful, but the experience of eating that salad <em>at<\/em> Canlis is what really sets it apart.\u00a0<\/span><\/p>\n<p><span style=\"font-family: Helvetica;\">The same is true for all three of these once-in-a-lifetime experiences. Try them and you&#8217;ll likely find that one visit simply isn\u2019t enough.<\/span><\/p>\n<p style=\"text-align: center;\"><span style=\"font-family: Helvetica;\"><strong>What are your favorite
