Cooking the rice is fairly simple and straightforward, but the dal and curry require a careful hand. Learn from your guide the proper way to slice the onion and garlic, and then study the different balance of spices employed for the lentils, vegetable curry, and the chicken curry. There are no secret ingredients, so feel free to ask your host what kind of curry powder they use, so you can bring these traditions home with you.
