When I mentioned upon check-in that I was allergic to wheat (just off-handedly, because I had to explain why I hadn’t tried any pasta in Italy yet), the next morning the staff had an entire tray of gluten free food for me and one staff member even brought me freshly baked gluten free pastries from a cafe!
