Paz Xan Xordo is the quintessential parador in Santiago. Located outside the city (about 15 mins away by bus), it offers rest and relaxation in a pastoral setting with plenty of character and local flavor.
First, the main building is gorgeous and was built in the mid 17th century. Common areas inside were beautiful. We had a glass of wine in the 'lobby', the living room of the house that was decorated with family treasures. The grounds were well-kept and there is plenty of space/trails to roam outside. There is a small chapel on site with a very interesting history, and a small brook and grain mill you can visit. According to the waiter at the restaurant, the grounds go as far as the eye can see.
Second, the room and bathroom were excellent, quiet and clean. Room was big and bathroom was huge. We had a window with a lovely view of the grounds. Plenty of closet space. Bed and linens were excellent.
Third, meals are served on what used to be the stable, but now is a beautiful restaurant. Service was stellar (we only had dinner) and the food was topnotch.
Lastly, the service was excellent. An attendant carried our bags to the room. Checkin and checkout was flawless. The manager offered suggestions and helpful advice. You don't even need a car. Bus stop from/to airport or city is 200m away from the hotel.
Highly recommended! AAA all the way.
