You'll be spoiled for sightseeing choice when staying in Cowes. Gurnard Beach is a good place to begin here, but there are many other fine spots to appreciate. Osborne House, Seaclose Park, and Exbury Gardens and Steam Railway are not far from the stretch of coastline and will fill in your day nicely.
