There's a ton of plaza de armas in south America.  But the one in Arequipa, Peru is the most magnificent.  It's built out of sillar, a white stone made out of volcanic material commonly found in the area.  Most of the architecture found in the city is built with this, giving it the nickname La Ciudad Blanca or white city.
La Ruta del Sillar located in the quarries of sillar (volcanic rock) in the city of Arequipa. The sight is very impressive and the way men work the volcanic rock, what an art! You can find this place passing beyond the airport.
