The term Hida beef itself is specifically given to the beef from black-haired cattle that have been raised in #Gifu perfecture for at least 14 months, with the beef to have to be at least grade B and texture grade of 3. Considered as the ideal #wagyu because the marbling doesn't onley permeates through the tender steak cut but also every part of the cow's meat. The juiciness and the freshness of the meat means that it can be eaten raw and often sold as sushi throughout cities in Gifu perfecture such as Takayama and Kanazawa. If you want to get the best out of your Hida beef culinary tour try putting the small beautiful old town of Takayama in your itinerary which is considered as the center for Hida beef culinary. Here, Hida beef can be found everywhere and cooked in varieties of ways from sukiyaki, yakiniku, to even beef jerkies. A definite must try is the Hida beef sushi that are sold mostly by street peddlers on street of the old town. Each stall usually has its own unique rolls and toppings to complement the raw Hida beef and the waiting queue is usually about 15 - 40 minutes.
