Fresh ground manioc is mixed with coconut, sugar and water to form a dense, flat bread similar to a thick pancake. The coconut and sugar add a touch of sweetness that makes this bread addictive. The bakery is over in the Kalinago Territory on the east coast, so it's a bit of a trip if you're staying in Roseau. But if you're visiting the Kalinago Village it's worth a stop, and you can also hit it up on your way to/from the airport.
